    Come join us at our enchanting fairy cottage homestead, nestled in the rolling hills of one of Denmark's most scenic vistas. The best way to describe the local area is that it's akin to the Shire, from Tolkien. The cottage is about 200 years old, with a small forest that includes an old orchard of very mature pear, walnut, apple, hazelnut, and cherry trees. Right now, we are a family of 2 humans (Noah, an American/North Carolinian & Marie, a Dane) in our 30's, 4 cats, 2 dogs, a muster of rabbits, some songbirds, an owl, and a flock of chickens (and soon ducks and geese).

    Right now, this fall and winter, we only need carpenters, joiners, and people with experience in renovation and carpentry and experience with concrete (as we are installing several wood stoves, after meeting Danish legal requirements), and of course drywall, wall panelling, and plumbing. We have some need for painting later on, but that is the last step.

    If you have thatching experience, that would also be wonderful! We have a lovely thatched house, but it does have a few leaks in places, and anyone with expertise in patching thatch is welcome to stay.

    All of our outdoor projects will take a break until spring 2025, so this fall and winter is all about renovation and fixing the house. The more the house is fixed, the more people we can actually host). There are animals to feed, but our systems are efficient enough that this process doesn’t take much of our time.

    Outside of house renovation, our projects in spring 2025 involve prepping beds for vegetables (we follow the "no dig method" and can teach about that if you come in spring/summer 2025), setting up agricultural space, making a greenhouse, and creating a thriving and sustainable ecosystem of surplus. Our objective is to create a healing permaculture environment that prioritizes lifestyle health, abundance, beauty, sustainability, and self-sufficiency.

    Marie is a singer/flutist/saxophonist in a rock band, a professional cook and learned Naturopath; well-informed on biochemistry. Noah is a good cook of certain dishes, an avid outdoorsman and survivalist, and presently pursuing a Wim Hof Method certification (though he has practiced it since 2018).

    We can teach about the no-dig method, Wim Hof breathing techniques, baking with sourdough, climate friendly cooking, general kitchen skills, or just inspire from our way of living which is busy and productive, but also meaningful and sometimes a bit primitive.
    You will learn some basics of renovating as well as raising chickens, rabbits, and soon bees.
    We can also teach you how to grow microgreens (which we used to sell at the farmer's market) as well as how to enjoy outdoor bonfires occasionally.

    We recently purchased this place, and it has some history of neglect, and so our more immediate goals include renovating the buildings and cottage interior. Daily activities reliably include caring for the rabbits, dogs, and cats, as well as dog training and walking, but most importantly is helping renovate the house which include putting up ceilings, paneling the walls, and working with insulation.

    While tucked away, the property is not particularly isolated. Odense (the capital of Fyn) is a 35min drive away, but most modern amenities and conveniences are a 7min drive to the nearby harbor town of Faaborg--from where it's possible to take the ferry to several islands in the Fyn archipelago. There is plenty of nearby hiking in the surrounding “Svanninge Bakker” area, both in the hills behind our property as well as the forests across the street in front. Bikes are available for going to town, and we do have Wi-Fi.
