    Hello everyone!

    My name is Lyoma - I am a Japanese Canadian guy, born and raised in Vancouver, Canada, where I spent the majority of my life. I moved to Japan 10 years ago, and have spent a lot of time on farms all over the country.
    I have recently found home in Hakuba, Nagano - right by the Japanese Alps, and will be opening a restaurant this winter.

    I am looking for avid food lovers, chefs / FOH staff with restaurant experience.

    The style of cooking will be shared plate/tapas style dishes, with charcoal-grilled / fermented foods / local and seasonal produce playing a big part in the menu.

    The position will be a full-time, paid job, but I'll make sure you have time to go ski and explore the beautiful resorts we are surrounded by.

    The position is for December - the end of March, but potentially have an all-year position if you were interested in staying in the Hakuba Valley.

    We'll be using a lot of local and seasonal produce, so you'll have the opportunity to learn about Japanese ingredients, as well as Japanese (and non-Japanese) fermentation methods and cooking styles.
    There are also many sake breweries/wineries to visit in the Nagano prefecture.
    For non-culinary adventures, Hakuba has a lot to offer in terms of winter activities - from skiing/snowboarding to snowmobiling, snowshoeing, and more.
    I have had the opportunity to explore a lot of Japan as well, so if you need any tips on traveling outside of Hakuba, I would be happy to help! For those wanting to learn Japanese, i'd be happy to teach conversational Japanese :)

    Kitchen: Looking for people who are experienced cooks, and have knowledge/interest in charcoal/fire cooking, fermented foods, farming (we will be growing our own microgreens).

    Front of House: Knowledge in wine, comfortable taking orders, overlooking bookings/reservations, ability to explain dishes to guests.

    Conversational Japanese language skills are appreciated, but not required.

    I currently have one female-only accommodation unit which is furnished and ready to live in.
    Can also accommodate a couple if both members will be working for the restaurant.

    Hakuba's winter is intense - very busy and lively, so it won't be a chilled-out holiday type of arrangement - but for those looking for experiences, I am positive you'll enjoy your time with us.
