Hi, my name is Mai. I live in Copenhagen. My family and I have had an allotment garden since 2007, so I'm used to all the practicalities of having a garden and a tree house to look after. In 2022, I rented a large piece of land north of Copenhagen to plant an organic vegetable garden and in January 2023 I travelled to Spain to take a Permaculture Design Certificate course (PDC) because I was interested in how we farm in ways where we work with nature, not against it. In autumn ‘23 I returned to the same area to live and work with a family who were working on integrating permaculture on their farm. However, my primary focus is not on gardening, organic farming or permaculture per se, but more generally on living as much as possible in harmony with the surrounding nature.

Since 2011, I have worked with sustainability in the textile and design field by sewing children's clothes from recycled textiles, being a store manager in a sharing economy dress swap shop, teaching asylum seekers how to sew from recycled clothes and more.

In 2017, I completed a course in health counselling and worked for five years in a health food store where I advised people daily on healthy lifestyle, diet, herbal medicine and supplements. However, my main interest is food as medicine, herbal medicine and a holistic approach to health.

I'm generally very interested in creating beautiful surroundings and beautiful, tasty plant-based meals (and cakes) by using what's available and leaving as little as possible to waste. I want to learn more about finding and collecting wild edible plants and herbs (foraging) and integrating them into my cooking.

Last but not least, I am a mother of two beautiful grown-up sons and a trained psychomotor therapist with a master's degree in educational psychology and additional training in mindfulness.

I'm generally good at using my hands and therefore good at many kinds of practical work. I have a green thumb, I'm good at painting because I'm very thorough and precise. I'm also quite good at cleaning, tidying and organising so that rooms and areas are pleasant to be in. I have worked with textiles for many years and am good at sewing and repairing. I also love to cook - especially plant-based - food.
