Cami and Seba spent a full season at our Locanda.
We were looking for a custodian couple to take care of the location as well as help with the daily business at the restaurant. The couple should be autonomous so that we could hand over the responsibility of the location.
Below are some of the main tasks that Cami and Seba fulfilled:
- Point of

- Cami: Kitchen assistant and coordinator: cooking and presentation of dishes; preparing the workstations with the necessary utensils and ingredients; collaborating in the execution of orders to suppliers; receiving and putting the merchandise in order, etc. In addition, her tasks also involved being the brain of the kitchen, managing and deciding the times. That is, she was in charge of receiving, forwarding, and coordinating the commands. Preparation of breakfast for the Agriturismo guests.
- Seba: Head of service: Receiving reservations and assigning tables to customers; coordinating and giving instructions to the waiters; being a waiter as well; controlling the stock of wine; receiving customers and accompanying them to their tables; presenting the menu and providing detailed information about the wines produced here; opening and closing the cash register. He was the reference of the Locanda for customers in case of any inconvenience.
We were positively surprised by their wish to deeply understand our philosophy and goals so that during the whole time of their stay, they gave us valuable advice and recommendations based on their practical experience. This was particularly valuable to us as they performed many tasks independently and gained a broad overview of the day-to-day work .
Cami and Seba from the very beginning fulfilled the tasks that we assigned them and quickly developed in their roles, where they helped in various organisational and planning tasks. They also autonomously noted things that needed to be fixed or improved and did not shy away from putting in an extra hour of work if needed - without us having to ask them.
Cami and Seba stayed with us for around 9 months. Over this period, they grew from valuable contributors within the Locanda team to dear friends of ours. Throughout their whole stay, we have always enjoyed a pleasant and very respectful exchange, even during the most hectic days and the longest working hours. Both were always well prepared for their tasks, friendly, helpful and actively contributed to the good atmosphere in the team.
Cami and Seba are leaving our winery on their own wish. We would have loved to keep them with us for longer but understand their desire for a new adventure and wish them all the best for their future.
The first thing we want to say about the place is that its owners are excellent people. They made us feel welcome from the first moment, they are very warm, friendly, generous and available.
In relation to the place we can say that it is dreamy. Located in the Chianti Classico area, one of the most wonderful regions of Tuscany. The terrace of the
… read more restaurant has one of the best views we have ever seen, surrounded by vineyards and mountains. Having had the opportunity to work here, enjoying nature in its purest state that is appreciated in this place, is something that we will never forget.
Regarding work: it is not the classic Workaway experience where you exchange accomodation and food in exchange for some help. This is a job, a real job. Here you have to work hard. Sometimes with a lot of intensity, especially in high season and long weekends.
The working environment is excellent, the owners are always open to dialogue. For them it is very important to be able to talk to find a solution to the problems or inconveniences that may arise. They are very accessible people and above all, very hardworking. This means that they not only perform their daily tasks and obligations but are also people willing to provide help when it is needed.
Season: this year 2024 began at easter and lasted until the beginning of november. The start of the season is relatively quiet and then the intensity increases as summer arrives. The most intense months are clearly july and august, and weekends. Then the intensity begins to decrease in september until the closing.
Tasks performed. Duality of roles:
1. On one hand we were the couple of custodians. That involved tasks such as:
Guest reception, check-in/out; preparation of breakfast and ensuring that there was everything needed; assist guests with any needs they may have; keep common areas clean and tidy; ensuring the general well-being of the garden (watering plants, pruning); ensure that everything was in order and working correctly in the agriturismo; report if something was faulty or not working properly; receive suppliers, organize the warehouse, do stock control, etc.
2. On the other hand, we worked in the restaurant.
Cami as “aiuto cuoco”. Assisting in the preparation, cooking and presentation of dishes; preparing the workstations with the necessary utensils and ingredients; collaborating in the execution of orders to suppliers; receiving and putting the merchandise in order, etc. In addition, her tasks also involved being the brain of the kitchen, managing and deciding the times. That is, she was in charge of receiving, singing and coordinating the commands.
Sebas as Capo Sala. Receiving reservations and assigning tables to customers; coordinating and giving instructions to the waiters; being waiter as well; controlling the stock of wine; receiving customers and accompanying them to their tables; presenting the menu and providing detailed information about the wines produced here; opening and closing the cash register. He was the reference of the Locanda for customers in case of any inconvenience.
It is important to clarify that this assignment of roles and tasks within the restaurant team was naturally developed according to our skills and interests.
Accomodation: the apartment where we stayed is fantastic. It has a kitchen-dining room, a spacious bathroom with shower, and a separate sleeping room. It is newly restructured and it is very cozy. It has air conditioning and heating. The wifi works perfectly throughout the place.
Experience summary: for us it was a wonderful experience. We couldn't be more grateful to the Davaz family for the opportunity they gave us, for their trust, warmth, goodness and kindness. Together with the work team that was formed this year, they are all excellent people. We are very happy to have met them and to have gone through all these experience together. We are going to miss them a lot!!

Elena worked with us at our Locanda this season. Initially, it was planned for her to stay with us for just one month, but we all got along so well that she ended up staying for the entire season.
Elena was a fantastic addition to our team. She was always reliable, friendly, and had a great attitude. She was very kind to our guests, and we
… read more received lots of positive feedback from them. Elena also speaks several languages, which was a huge help in serving our international customers and made communication much easier for everyone. She quickly picked up new tasks and really became a valuable part of the team.
She also had her well-behaved dog with her, and it was never a problem. The dog was calm and respectful, which made everything run smoothly.
We want to thank Elena for her great work and for being such a wonderful part of our team this season. She’s a great person to have around!

… read more got on very well with the Davaz family right from the start. We immediately felt at ease with them, always listened to and supported in each of our personal endeavours.
The team at the Locanda quickly became a second family. The atmosphere was always pleasant and the relationship with our colleagues made the hard days easier. Lia and I started the season as waitress and kitchen assistants, but after a few weeks the chef's departure put us in charge of the kitchen. Even though it was a big challenge at first, the Davaz family always encouraged us, supported us and trusted us to manage the kitchen as best we could. Once we got up to speed, we found our routines and automatisms and today we're both very proud and grateful for our season. We also had the pleasure of working with Kathrin in the kitchen, who was always available, always helpful and always concerned about our well-being.
On the whole, we’re just so glad we’ve come to work at the Locanda. We’ve been able to move on with our project while having an in-depth experience of the Tuscan tourism business.
