    Description

    Come join us at our cottage homestead, nestled in the rolling hills of one of Denmark's most scenic vistas: Svanninge Bakker.
    The cottage is an over 200 year old thatched, timber frame house, surrounded by a small forest.
    We are a family of 4: Noah, an American/North Carolinian, Marie, a Dane and two babies. Animal family members include 2 cats, a dog, a flock of chickens, and beehives.

    Our objective is to create a healing environment that prioritizes lifestyle health, abundance, beauty, sustainability, and self-sufficiency. To this end, our projects broadly involve expanding the annual and perennial garden, as the season permits, and yearlong help with housekeeping/household, as we have twin babies.
    Marie is a singer/flutist/saxophonist in a rock band, a professional cook and learned Naturopath; well-informed on biochemistry. Noah is an avid outdoorsman and survivalist, studied economics, and is presently pursuing a Wim Hof Method certification.

    We can teach about the no-dig method, Wim Hof breathing techniques, inspiration from our way of living; which is busy and productive, but also meaningful and sometimes a bit primitive.
    This is an opportunity to learn some basics of renovating, gardening, and how to enjoy outdoor bonfires, weather permitting.

    We purchased this place in 2024, and it has some history of neglect--enough that when we first came here, we lived in a tent. We've come a long way since then.
    Presently, our most critical need is help with household tasks (such as laundry and general cleaning) as well as cleaning up the neglected part of the house--which is fairly dirty work and requires some lifting. We will also need to prep firewood for winter. This will be done by cutting scrap wood with easy to use power tools, no axe skills needed. Another project is moving some pallet fencing around in our little forest.

    If you’re planning to come in the springtime, the chores will involve prepping beds for the annual vegetable and flower garden, following the "no dig method" (as espoused by Charles Dowding) and the “Eden gardening method" (both of which we can teach about). You’ll get the chance to get into shape with real farmer fitness, as part of the job will be moving wheelbarrow loads of soil and mulch. There will be plants to plant out, and a lot more garden like work to do. In the fall or early spring we harvest honey.

    The 5 hour day begins at 9 and ends at 15. Lunch is served at 12, where you will have a 1 hour break. 

    Marie is always nearby to answer questions, but you’ll primarily be working on your own.

    We are currently readying an outdoor kitchen and sleep space in a structure in the forest. The structure is nothing like indoors but does provide protection from wind and rain, and it’s an alternative to the previous tents. 

    The structure will be provided with:
    - 2 single beds
    - Small gas stove
    - Oven 
    - Tripod stand for bonfire cooking 
    - Basic kitchen appliances 

    Nearby you will find access to the toilet (shared), a private bonfire spot, and a solar powered outdoor shower (that never really heats up). We do not have a working shower indoors, nor actual hot water, and you have to be comfortable with this. 

    We provide a warm dinner for pickup every night at 6 o’clock. Unfortunately this time we wont be doing communal dinner as usual, since we have two babies to feed and put to bed. We do your dishes after dinner and lunch, but you clean your own dishes after breakfast.

    Breakfast you make yourself, and we provide homemade bread, cheese, butter jam, oats, yoghurt, milk and fruits for your fridge. And of course coffee and tea. Lunch is always well put together sandwiches with homemade sourdough bread.

    Odense (the capital of Fyn) is a 35min drive away, but most modern amenities and conveniences are a 7min drive to the nearby harbor town of Faaborg--from where it's possible to take the ferry to several islands in the Fyn archipelago. There is plenty of nearby trails to explore in the surrounding “Svanninge Bakker” area, both in the hills behind our property as well as the forests across the street in front.
    We live very close to some of Denmarks most popular hiking trails. We also would like to inform you, that the cottage is close to a road, which can be noisy.
