Description
My husband and I are retirees; he is Zambian and I am Canadian. Our retirement project is an eco-lodge, situated half-way between the city-centre of Livingstone Zambia and the world-famous Victoria Falls.
We have had difficulty finding staff who have been adequately trained and had good experience, especially in the areas of (1) Marketing, and (2) Food and Beverage.
For guests we provide accommodation in our 5 spacious chalets and meals in our restaurant and bar ("boma" area). We grow some of our own produce at the lodge.
We would also like to be a desirable restaurant option for local residents of Livingstone who want to eat out, especially during the tourism low season. We want to focus on high-quality meals which reflect our "eco" philosophy. I would like to include vegetarian dishes among our unique offerings. For example, there is a lovely local dish made from pumpkin leaves and groundnuts (peanuts) which is enjoyed by many overseas visitors.
Addendum in Feb 2022 due to the Covid-19 pandemic:
Occupancy is extremely low and there are no overseas visitors back yet. We had to cut our staff down to just 6 persons in 2020. We have no qualified management person there but have a "Caretaker"/Bookkeeper. He is very conscientious and hard working. What we need now, however, is someone to assist with marketing so as to bring up our occupancy.
We hope to have one more employee who could be further trained by our volunteer in marketing, and in provision of meals and drinks.Types d'aide et opportunités d'apprendre

Echange culturel et opportunités d'apprendre
Volunteers will learn much about Zambian customs and culture. They can also visit the many physical attractions in the Livingstone area. There is not an adequate organized public transit system in Livingstone and most people take local taxis. It takes 15 to 20 minutes to go to town, or to go the opposite direction to the Victoria Falls.

Aide
We need a volunteer who is knowledgeable about F&B operations, i.e. who can help us implement a good cost control system, introduce a suitable menu and train our few kitchen and waiter staff in all needed areas, including cooking.
A "suitable menu" would be one that incorporates healthy, sustainable, local and economically affordable ingredients to produce a phenomenal result.
