  • Description

I would love to share my joy and passion for teaching, cooking and the environment. I love hiking and being in nature. I am a forest therapy guide and have been on a spiritual journey for many years, I recently spent 7 months in India studying ayurvedic nutrition and doing a 6 weeks panchakarma. I am currently on a 2-years leave of absence from my international school in Rome, Italy where I am a library media specialist. I have also been running my part-time, private nutrition consultation practice in Rome Italy since 2003. I am a Registered Dietitian Nutritionist.

I have been an instructor at Syracuse University in Florence where I taught the class Food, Wine, Culture & Health: The Mediterranean Diet. The class involved the organisation of weekly cooking experiences, week-end field trips to Tuscan organic farms, local cheese and wine makers, and exposure to several aspects of the Italian food systems.

I have also volunteered at the Sustainable Food Project Kitchen at the American Academy of Rome, a project created by Alice Waters. I have acquired a considerable amount of cooking skills utilising fresh local producing minimal waste.

I have worked as a Food, Gardens and Sustainability Coordinator at an International School in Rome, where I worked daily with the food service manager in offering a unique dining experience based on delicious, local and seasonal foods put together in a well balanced nourishing menu. I was also responsible for the integration of the school’s Edible Garden in the curriculum.
I was involved in the school’s Environmental Education and taught Health and Wellness units educating students, staff, faculty and parents on sustainability initiatives.

I have attended Edible Garden teachers training in Occidental Arts and Ecology Center in California which was instrumental in connecting her with other educators and in furthering her knowledge about Edible Education.
I hope to contribute to the fun of living and exploring.

  • What else ...

I am an avid hiker and love nature and the outdoors. I have travelled to the Himalayas, India, Peru, most of Europe, Morocco and the Middle East, I have recently spent 7 months in India and have been on a spiritual journey for many years. I have recently become a forest therapy guide and love to take people in nature and help them connect with it.
I enjoy simple things and have a great sense of humor.
I am well into my 50s and now it is a time for me to explore other ways of life and shed many fixed beliefs about myself and others. Daughter of immigrants, nutritionist, librarian ex wife and mother of a neurosurgeon: I carry many labels. I feel that maybe it is time to shed those labels as much as possible and keep only what is useful to me and other. I love to explore and to find my shining innermost being and share it with others who walk this beautiful Earth.
